Arlington Park Welcomes Guest Chefs

Racing season is underway at Arlington Park and Levy Restaurants, the official restaurant partner at Arlington, has invited some of Chicago's finest chefs to prepare special menus for guests at Arlington. The chef series, featuring chefs from the Levy family of restaurants, will kick off with "Top Chef Masters" Season 2 contestant and James Beard Award-winning Chef/Partner of Spiaggia, Tony Mantuano on June 5-6. Additional chefs scheduled to appear throughout the summer include Chef Greg Biggers of Fulton's on the River, Chef Dominique Tougne of Bistro 110, Chef Bob Andrea of Jake Melnick's Corner Tap and Spiaggia Sommelier Steven Alexander.

All guest chefs will prepare signature dishes that have made their restaurants Chicago favorites. Guests at Arlington Park will enjoy special menus in locations throughout the park.

Tony Mantuano, Spiaggia -- June 5-6, 2010
Tony Mantuano, a James Beard Award-winning Chef and "Top Chef Masters" contestant known worldwide for his four-star Italian restaurant, Spiaggia, will prepare special menus at Arlington Park on June 5-6. Mantuano will create a prix fixe menu for guests in the Million Room and offer small plates and wine pairings inspired by his "Wine Bar Food" cookbook in the suites. The Terrace Café will be turned into a pop-up restaurant aptly named Wine Bar Food, also serving dishes and wine pairings from the cookbook, including flaming ouzo shrimp, tuna tartare with rice, beans and capers and salumi misti with assorted Niman Ranch salami, prosciutto di parma and olives. Greg Biggers, Fulton's on the River -- June 19-20, 2010
Special for Father's Day weekend, Chef Greg Biggers of Fulton's on the River will bring grilling at Arlington Park. In addition to a special prix fixe menu in the Million Room and a special Fulton's suite menu, Biggers will host cooking demonstrations in the park area on June 19. He'll also serve Fulton's favorites in the Marquee Tents as part of a special package, featuring chef-carved whole grilled "tomahawk" steaks; a grilled local nectarine and avocado salad with truffle lemon vinaigrette, local pea shoots and frisee lettuce; and a local heirloom potato salad with apple smoked bacon Boursin cheese and local scallions. The Fulton's Marquee Tent package also includes admission, beverages and a daily racing guide. Chef Biggers has also created a Fulton's carved beef brisket sandwich on a pretzel roll that will be served in Cobey's Food Court.

Steven Alexander, Spiaggia Sommelier -- July 10, 2010
Wine Director and Sommelier at Spiaggia, Steven Alexander will visit Arlington Park as the sommelier for the day on July 10, for table-side wine tastings in the Million Room and tastings throughout the suite level. He will feature some of his favorite wines from the Spiaggia menu.

Dominique Tougne, Bistro 110 -- August 20-21, 2010
Award-winning Chef Dominique Tougne of Bistro 110, one of Chicago's finest French bistros, will join in celebrating the International Festival of Racing on the most anticipated weekend of the year for the Arlington Million. Chef Tougne will prepare the menu for Breakfast at Arlington on the Apron Level with French-inspired dishes, including made-to-order crepes and French pastries such as Caneles Bordelais and Gateau Breton. Bistro 110 favorites will be served in the Million Room featuring duck confit with cherries, crème fraiche mashed potato; roasted trout with almonds and tarragon beurre blanc, Provencal vegetable tian and micro green; and French vanilla crème brulee.

Bob Andrea, Jake Melnick's Corner Tap -- September 4, 2010
Jake Melnick's Corner Tap, famous for its barbecue and extensive beer list, will bring many of their barbecue favorites to Arlington Park on Saturday of Labor Day weekend. Chef Bob Andrea will take over the Marquee Tents, creating a barbecue experience perfect for Labor Day celebrations serving Jake Melnick's signature ribs, pulled pork, beef brisket, and traditional BBQ sides.
